Best Coffee Cake Recipe


I was craving this last week and found a really good recipe. Thought I'd share it. Nathan loves it too. Normally some recipes are pretty dry but not this one. Especially if you follow it exactly.
This is an easy streusel coffee cake, baked in a square or round layer-cake pan.

Ingredients:

  • Topping:
  • 1/2 cup brown sugar
  • 1/4 cup sifted all-purpose flour (sift before measuring)
  • 1/4 cup butter, room temperature
  • 1 teaspoon cinnamon
  • Cake:
  • 1 1/2 cups sifted all-purpose flour (sift before measuring)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Preparation:

Topping. In small mixing bowl, combine topping ingredients. Blend with fork until crumbly. Set aside.
Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl. In a medium bowl, beat together beaten egg and 3/4 cup sugar and 1/3 cup melted butter. Add milk and vanilla. Stir in flour mixture and mix well.
Pour batter into a greased and floured 8-inch square or 9-inch layer-cake pan. Sprinkle topping crumb mixture evenly over batter. (I found that it is even better if you layer the cake with 1/2 batter and 1/2 the topping. Don't worry if its not perfectly even. ) Bake at 375° for 25 to 30 minutes. (It will be a little gooey but not too much) Partially cool in pan on wire rack. Cut coffee cake into squares while still warm.

The toys are back in town.

For Nate's b-day (the big 25) we all went out and saw Toy Story 3. We decided to risk it and take Kendyl with us. Normally she has a very limited attention span. But armed with a package of licorice I figured she might be okay. In the end she hardly moved during the entire 2+ hours we were there (including the previews). And her absolute favorite scene was the "scary" part many people warned us about with the big baby. She LOVED it. As I'm posting this she is going crazy just looking at the picture of it. 

Who'd of thought?

(probably just because it resembles her own baby doll)

we are alive

but our camera is not at the moment

in short--our life so far:

denver is great (no snow in summer=great in my book. sorry rexburg.)

we are all unpacked and moved in.

kendyl loves the apartment.
she loves hearing the ducks outside.
loves pushing the buttons in the elevator.
and loves running and twirling in her "big" new home.

nathan is just waiting for his phone to ring from any of the 30+ jobs he's applied for.
so if you ever want to make us jump just call our phone.
